Instant Pot Chinese Pork Loin Recipe
Pork Loin is a good value, and it’s usually tender and juicy if cooked right. It is a mild meat, and takes on any flavor that it’s cooked with. Anyone who loves Chinese flavors, will want to make the following delicious Instant Pot Chinese Pork Loin. It cooks in the Instant Pot for only 20 minutes, and is easy enough for a weeknight. However, it’s special enough for company.
I like to serve this juicy roast with rice and Chinese stir-fried vegetables, either the frozen kind, which are pretty good, or a favorite and very Chinese vegetable, Stir-Fried Garlic and Ginger Bok Choy.

8 Servings

1 tablespoon vegetable oil
2 pounds pork loin roast

1/4 cup sugar
2 cloves garlic, finely minced
2 tablespoons finely minced fresh ginger
1/4 cup soy sauce
2 tablespoons black bean sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons dry sherry
1 teaspoon sesame oil

1 cup chicken broth

chopped green onion, for garnish

  1. Turn an Instant Pot to the sauté setting and add the vegetable oil. Trim the fat off of the pork loin roast; brown the roast on all sides.
  2. Measure the sauce ingredients, except the chicken broth, into a bullet blender; blend until smooth; pour over the roast. Pour the chicken broth over all.
  3. Cover the pot, set the valve to sealing, and set the pot to manual for 20 minutes.
  4. When the cycle has finished let sit for 15 minutes. Release the pressure and place the roast on a serving platter; cover with foil and keep warm.
  5. Turn the Instant Pot to the sauté setting and let boil until the liquid is reduced by half.
  6. Slice the roast and pour the sauce over the slices. Garnish with the green onion.
