Whenever I travel in Mexico, I am always in pursuit of the "perfect antojito"/snack. However, it was in my own house that I discovered the "ultimate perfect antojito." I call them "Baked Stacked Quesadillas with Chorizo." They are the best "pizza" that my wife, Maria, has ever eaten!
